Pernod is a classic French anise-flavored spirit, similar to pastis, known for its distinctive licorice flavor. Originally, Pernod was made as an absinthe-like drink in the 19th century, but after absinthe was banned in many countries, Pernod adapted its recipe to create a pastis-style aperitif that’s lower in alcohol and doesn’t contain wormwood.
 
Pernod is made using a combination of star anise, fennel, and various aromatic herbs, giving it a smooth, slightly sweet, and herbaceous taste. When mixed with water, it turns a milky white, a transformation known as the "louche," which enhances its refreshing character.
